Why We Still Make Ghee with the bilona
High-pressure steam, industrial cream, and a centrifuge that can turn out a thousand liters an hour. It is efficient. It is fast. And it is utterly lifeless.
We choose the harder way.
We start with curd because that is where the soul of the flavor begins. We churn that curd in a wooden Bilona, until the butter separates. Then, we simmer that butter over a slow, watchful flame until the moisture vanishes and the golden grains appear.
It takes us ten times longer than a factory. It yields less. It costs more.
But it results in a ghee that is alive with aroma and rich in taste. Bilona isn’t a manufacturing “step”—it is the only way to capture the essence of the milk.
